Here is a simple recipe I found on veggie cookie which involves millet, brussels sprouts and mushrooms.
These ingredients are a nice combination, I love millet recipes.
Ingredients
For the Millet:
- 1 cup – Millet
- 2 cups – Water
For the veggies:
- ~1 to 2 Tbs – Olive oil
- ~ 1 to 2 tsp – Salt
- ~ 1 to 2 tsp – Pepper
- ~1/2 – medium yellow onion
- ~3 cups – mushrooms
- 1/2 cup – Coconut milk (or cashew milk or whatever you have on hand)
- 1 Tbs – Sage (Fresh if available)
- ~2 Tbs – lemon juice
Directions
Start out by cooking the millet. I use a miracle rice cooker, millet can also easily be cooked on the stove as well. Millet is very similar to rice, 2 cups of water for every cup of millet.
Heat up oil in medium to large saute pan. Begin washing and chopping veggies while the millet is cooking. Saute at medium to low heat.
First add the chopped onions.
Next add brussels sprouts, chopped in half.
Once the onions and brussels sprouts begin getting tender add mushrooms, saute a few more minutes.
Add 1/2 cup of coconut milk, and 1 to 2 tsp of sage.
Saute a few minutes more until coconut milk is mostly absorbed and add millet which should be done cooking by now.
And serve!
