I made a combination of these two recipes:
So here is the basic recipe I came up with:
Ingredients:
1 medium onion
4 or 5 cloves of garlic minced / chopped
2 or 3 Celery stalks
1 or 2 Carrots
2 Tomatoes
1 medium eggplant
A few dashes of dried chopped up ‘hot peppers’
1/2 to 1 tsp of Turmeric
1 to 2 tsp of curry powder
1 to 1/2 cup lentils
2 1/2 to 3 1/2 cups water
a splash or two of olive oil
Directions
Chop everything to whatever size you prefer
Saute onions, garlic, carrot and celery for a little bit
Add Tomatoes and eggplant
Simmer for a couple minutes
Add lentils, stir
Add water
Bring to boil for a moment, turn burner to low heat and simmer until lentils are cooked. It should take about 30 to 45 minutes.
This is also good over rice.
