Here is a tasty combination of a couple amazing recipes.
Avocado toast is great. Avocado toast with mushrooms is even greater! Recently we got some wild Hedgehog Mushrooms from Forest to Fork. And the bread is from a great local bakery, Brake Bread in Minneapolis.
Ingredients
Guacamole
- 2 ripe avocados
- 1 clove of garlic
- 1 lime
- 1/2 lemon
- pinch of hot pepper flakes
- pinch or 2 of salt
Hedgehog mushrooms
- 4 oz of Hedgehog mushrooms
- 1 clove of garlic
- fresh parsley
- 2-3 Tablespoons of butter
- 1-2 Tablespoons olive oil
Toast
Optional, add arugula or other green, sliced tomatoes or any other additions that seem appropriate.
Directions
Guacamole
In a medium bowl smash avocados with spoons, a potato masher, or however you prefer to mash them into a paste. Add lime joice, add lemon juice, add pinch of hot pepper flakes, and salt. Mix until it is all blended to your desired consistency.
Hedgehog mushrooms
In medium pan on medium heat, add butter, once butter melts add olive oil, allow it to heat for a minute. Add mushrooms and stir frequently for about a minute or 2 until mushrooms begin to release their juices. After about 1 or 2 minutes add pressed garlic and fresh parsley. Total cooking time ~5 minutes tops, maybe 4 minutes. Do not overcook the mushrooms. Remove from heat. Add a few pinches of salt, mix it up and let the mushrooms sit until toast and guacamole are ready.
Toast bread do your desired toasty-ness. Spread guacamole on bread, add greens, add mushrooms and any other ingredients. Enjoy!
