I have created two kale monsters. These monsters are furry and four-legged. They are better known as Bella and Claudia, our adorable dogs.
They get excited when they see me picking kale out of the garden. They anxiously stand by while I wash it and tear the leaves from the stem. They sit without being told as I divide the stems between them. And chomp them down before I have the next one ready.
Bella has learned the word kale. Her head perks up and her tail starts wagging when she hears it. It’s in the same category as peanut butter, bone, and treat.
They have even jumped on the green smoothie bandwagon. They love to lick out the blender after the smoothies have been poured. They also know the sound that an empty straw makes. They come running from another room to get one last taste until the next morning, when it starts all over again. They are not spoiled, they are well-loved family members.
Mango Jalapeño Smoothie
Makes 1 quart
1 kiwi
1 ¼ cups frozen mango
½ avocado
Juice of 1 lime
1 jalapeño, seeds removed
½ bunch parsley or cilantro
3 handfuls of kale
2 cups of water
Directions: Place all ingredients in blender. Blend on high until smooth. Enjoy!
