Lentils with Steamed Brussels Sprouts and Beets

This is an extremely simple and healthy recipe. The basic overview is: Cook lentils and steam the Beets and Brussels Sprouts over lentils while they are cooking. Once cooked add White Balsamic Vinegar, Sesame Seeds and serve.

Ingredients

  • 1/2 Cup of Green Lentils
  • 3 Cups of water
  • 1 tbs Olive
  • 1 tsp Salt
  • ~1 tsp Pepper
  • ~1 tsp Thyme
  • 2 to 4 Tbs White Balsamic Vinegar
  • Sesame Seeds

Directions

Being cooking lentils. Add the Olive Oil, Salt, Pepper and Thyme. I’m using a Miracle rice cooker but this could also be done on a stove with a steaming basket over the lentils. Some balsamic vinegar can be added to the lentils while they are cooking.

Chop Beets and place in steaming basket

Chop Brussels Sprouts and add to steaming basket.

Place steaming basket over lentils and cover while they are cooking.

Let lentils cook for ~30 minutes until water is absorbed and lentils are soft / fully cooked. Add any additional seasonings, sesame seeds and any additional balsamic vinegar. Enjoy!
