Ok here is a simple recipe for an omelet
Ingredients:
2 eggs per omelette
1 onion
2 to 4 mushrooms
2 to 4 cloves of garlic
1 carrot
1 tomato
a few green olives
a few tablespoons of olive oil
a round frying pan helps the omelet form a good shape
Directions:
Chop veggies.
Heat up a little bit of olive oil in frying pan and saute onions and garlic for a few minutes
Add carrot, mushrooms and other veggies. Saute until desired tenderness.
Once the veggies are sauteed put them in a bowl. Add another table spoon or two of olive oil to coat the bottom of the pan for cooking the eggs.
Then beat two eggs in bowl with a fork, add pepper if you want.
Eggs beaten and pepper added:
Dump the eggs into the oiled pan with the heat set to around 4 to 4 and 1/2 (low / medium). Let the eggs cook until they start to look like this:
Once the egg starts cooking, sticking together and bubbling up a little bit it is time to flip the omelet. Make sure to flip the omelet before it starts to stick to the pan or burn. It may help to hold up and angle the pan when flipping the omelet, or using an extra flipper / spatula can help as well.
Add the veggies to one side of your omelet.
Fold the egg over the veggies. Hopefully you don’t have too many veggies…

I would try to use less oil but the less oil used the more chance of the omelet sticking to the pan.
Note: Scrape any egg stuck to the pan before cooking another omelet.
