Here’s a simple dinner recipe we’ve been making every week or so.
Ingredients
Rice
- 1 cup dry white rice
- 1.75 to 2 cups water
- salt to taste
- 1 lime
- Cilantro at least 1/4 to 1/2 bunch
Burritos
Heat on stove
- 1 can black or pinto beans
Saute
- 1 to 2 tbs olive oil
- 1 onion
- ~4 cloves of garlic
- 1 to 2 red peppers (or any color you like)
- Any additional peppers, sweet peppers, jalapeño etc.
- 1 zucchini
- 2 ribs of celery
- ~1 cup sweet corn
- Tomatoes
- Lettuce / greens
- Hot sauce
- Salt and pepper to taste
- Chili powder
- Avocado
Directions
Start the rice however you prefer to cook rice. In this recipe we used our Miracle Rice Cooker. Wash the rice, add to rice cooker, add water, add a few grinds of salt.
Get the beans going. Open can and place beans in a small pan on low heat.
Wash, prep and sauté the veggies. Chopping everything as large or as small as you prefer. Typically we start with onions, zucchini, celery, then add peppers and any other veggies. Add chili powder, salt, and pepper to taste.
Once veggies are sautéing the rice will complete. Remove rice from heat, add cilantro, lime juice, and lime zest to the rice. Mix.
Add frozen corn and tomatoes to the sauté pan.
Prep lettuce / greens.
If you have tortillas, prep them when the rice finishes.
Plate as over lettuce / greens bowl or burrito. Top with sliced avocado. Add any additional toppings, hot sauce, cheese, sour cream, sprouts etc. Serve, enjoy!
