This is was a tasty and simple shepherd’s pie recipe from Vegetarian Shepherd’s Pie also vegan | Girl Makes Food.
There were no kidney beans on hand so lentils and tempeh were added.
Ingredients
Filling:
- 1 tablespoon EV Olive Oil
- 1 Onion (diced)
- 2 Carrots (diced)
- 6 ounces Mushrooms (I used baby bellas – sliced)
- 1 can Kidney Beans (drained and rinsed)
- ½ cup Frozen Corn
- ½ cup Frozen Peas
- 2 teaspoons Worchester Sauce (I used vegan)
- 2 teaspoons Soy Sauce
- ¾ cup Vegetable Broth
Topping:
- ½ recipe Healthy Mashed Potatoes
Instructions
- In a large pan cook the carrots and onions until the carrots soften
- Add the mushrooms and cook until the mushrooms soften
- Add the remaining ingredients and bring to a simmer
- Pour the filling into a casserole dish and top with the mashed potatoes
- Serve and enjoy!!!
